Adios boring school lunch! At Global Pioneer Academy, we know that our role is more than childcare--its also ensuring that we are helping you raise healthy children. That includes healthy snacks and lunches. We are passionate about creating a diverse menu that is kid-friendly and encourages our little ones to try new foods, discover new favorites and above all--is healthy. Our on-site Chef prepares daily snacks and meals with fresh ingredients from local farmers markets and dairy farms. Our meals are served warm and always include fruits and vegetables.
Today, Chef Mei prepared homemade broccoli,cheese and carrot soup with homemade sweet ham and cheese sandwiches--perfect for a cold winter day!
Our little ones loved the special lunch. Check out Chef Mei's recipe below to replicate at your home!
Broccoli, Cheese & Carrot Soup:
2 carrots - skinned & diced thin,
1/4 cup of flour
1/2 stick of butter
1 box chicken stock
4 cups fresh broccoli finely chopped
6 cups milk
1 block velveta cubed
salt & pepper to taste
Over heated pot, add butter until melted and add flour--whisk until paste forms. Add chicken stock and whisk until incorporated. Add carrots and velveta cheese. Stir until melted and add broccoli and milk. Bring to boil, stirring occasionally. Add salt and pepper to taste.
Warm Sweet, Ham and Cheese Sandwiches
24 kings Hawaiian rolls
24 slices of honey ham
24 slices swiss cheese
2 sticks of butter, melted
3 tbs brown sugar
2 tbs mustard
2 tbs worcestershire sauce
1 tsp onion powder
1 tsp garlic powder
Slice rolls in 1/2 and place bottom of buns in pan. Layer 1 slice ham and 1 slice cheese per sandwhich. Place top on sandwhiches. Add butter, brown sugar, mustard, worchestershire sauce, onion and garlic together. Pour over sandwich and warm in oven until cheese is melted and tops are golden brown.
